As strange as the name sounds: psyllium husk flour is a great substance. On the one hand, it consists of almost 90% indigestible roughage, i.e. it is hardly absorbed by the body, but excreted almost unchanged.

Then it has two absolutely great properties that are very interesting for the low-carb kitchen. Psyllium swells up to 50 times its volume in water! This ensures a good feeling of satiety. On the other hand, the psyllium husk flour has a very strong internal cohesion. If you put a tablespoon in a glass of water, you get a viscous mass that flows very slowly. Therefore, when thickening sauces, you should be careful not to use too much. This effect is ingenious when baking bread or cakes. The pyslium ensure that the baked goods can rise well and then retain their structure during baking. For low carbers who want to avoid gluten, psyllium husk flour is the excellent alternative. But it can also be used together with gluten to create a particularly fluffy bread.

Even non-low carblers use psyllium husks, as they swell in the intestines and form a slimy consistency. Many say that this natural substance works better than artificial medicines. For more information about the health effects, we refer to => Wikipedia

Psyllium is obtained from the Plantago ovata plant, which is also called flea seed because of the appearance of its seeds. Another name is "Indian plantain" because this plant is actually related to our native buckhorn. Psyllium husks are obtained from the husks of the small oily seeds.

Our psyllium husk flour comes directly from India and has the highest level of purity on the market (99%). As with all imports from distant countries, we have had our goods examined intensively (link to Intertek's analyses). We can assure you that our psyllium husk flour complies with all legal requirements regarding germs, pesticides and heavy metals with a high safety margin.

Our current psyllium husk flour is ground a little coarser (to 180 microns instead of the usual 100 microns). As a result, it takes a little longer for the mucilage to dissolve in the water, and if you put it in your mouth without watering, you can feel the tiny granules on your tongue.

However, nothing has changed in terms of quality. It still has 99% purity and the content of bulking agents is the same.

If you have a recipe with unground Psylium you can replace it with about one thrid of our fine ground material.

And in our experience to date, nothing has changed for the baking properties either.

P.S. Eigentlich hatten wir für unser Flohsamenschalenmehl einen Brennwert von 125 kJ/30kCal angegeben. Einer unserer Kunden hat uns jedoch darauf hingewiesen, dass unsere Angaben für den Brennwert nicht mit der dafür gültigen EU-Verordnung übereinstimmen. Wir hatten den von unserem Lieferanten angegebenen Brennwert nach der wesentlich präzisieren US-Amerikanischen Verordnung übernommen. Nach EU-Verordnung Nr. 1169/2011 Anex XIV müssen für Ballaststoffe ein Brennwert von 8kJ/Gramm berechnet werden. Für die Ballaststoffe im Flohsamenschalenmehl ist das völlig unsinnig, da diese zu 90% unverdaulich sind. Trotzdem sind wir verpflichtet, den „falschen“ Wert anzugeben.
