Coconuts are a wonderful baking ingredient. Unfortunately, these contain a high natural sugar content, so that almost all coconut products are only suitable for low carbers to a limited extent. We are very happy to have found a manufacturer in Sri Lanka who not only removes some of the fat from the coconut meat in a particularly gentle process, but also washes out almost all of the sugar at the same time.
Our -Carb Cocos Flour contains only 3.3% fructose and no other carbohydrates. This has been confirmed to us by our Intertek laboratory (see test report). Finely ground, it can be used wonderfully for all baked goods and is also suitable for sauces and other coconut dishes.
Expect a unique coconut flavor with almost no sweetness (NOTE: If you want a sweet taste, you must add a higher amount of sweetener or sugar substitute than when using regular coconut flour).
The pure coconut taste is quite intense, since only a small part of the coconut oil responsible for the taste has been extracted. The processing was very gentle and without any heating, so that you benefit from the healthy natural oils of the coconut.
