ERYTHRITOL is the optimal sugar substitute. The polyol (sugar alcohol "erythritol") is naturally produced from sugar through fermentation with special fungi (similar to alc. fermentation). This has almost all the familiar properties of sugar: it looks like sugar, tastes almost 100% % identical to sugar, but has no calories, does not attack the teeth and is 100% insulin-neutral.Even negative effects such as flatulence or increased intestinal activity, which are known from other sugar substitutes, do not occur with erythritol.

The sweetening power of 100% -carb sugar corresponds exactly to that of normal sugar, since a little stevia has been added to -carb sugar. We have been looking for a sugar that really meets our high quality standards for a long time. In the case of -carb sugar 100%, the mixing of erythritol and stevia was carried out in the liquid phase. This allowed the stevia to be evenly distributed. Another advantage of this is that the two disadvantages that erythritol and stevia are said to taste cancel each other out. The slightly cool feeling that erythritol creates on the tongue is significantly reduced by the stevia. And the slightly bitter taste of stevia is almost imperceptible due to the mixture with erythritol. Particularly attractive for the low-carb gourmet is that you can caramelize and candy with 100% -carb sugar.

Erythritol is made from starch and is a polyhydric alc.ohol (polyol). This has nothing to do with the etha.nol in wine or beer, but is only the official name for this class of substances. According to the EU standard, it is to be recorded under carbohydrates, but it contains no calories and does not cause an insulin reaction in the body. Our supplier states that the erythritol is more than 99.5% pure. This is the highest purity available on the market. Competitors reporting 100% have rounded purity.

For products that contain a sugar alcohol, we are obliged by the EU standard to provide the following information: "Excessive consumption can have a laxative effect." Hardly any cases of such a "side effect" are known for the natural sugar alcohol erythritol.

Note: This ingredient does not have a reduced carbohydrate content as defined by EU Regulation (EC) No. 1924/2006 in connection with the Food Labeling Ordinance. The reason is that the contained sugar substitute erythritol is to be summed up as carbon anhydrous within the meaning of EU Regulation (EC) No. 1924/2006. In terms of the concept of a carbohydrate-reduced diet (low carb), in deviation from this definition, it is only about the reduction of usable carbohydrates, i.e. carbohydrates that directly influence the blood sugar level (sugar, starch). This product is recommended as a low-carb cooking and baking ingredient, as it has a reduced proportion of usable carbohydrates compared to sugar in the sense of a low-carb diet.
