We ourselves and many of our customers appreciate the low-carb chocolates from Belgium and Greece in our range, but chocolate made with cocoa butter, butter, cream powder, cocoa (fibers) and suitable sweeteners tastes even better and has even fewer carbs . The only thing we always found difficult was the choice of cocoa butter. Deodorized cocoa butter chips taste almost nothing and you can replace them with much cheaper palm fat with almost no loss of taste. On the other hand, natural cocoa butter often has a bitter aftertaste that spoils the enjoyment, especially with white chocolate. This cocoa butter from Ecuador stood out in terms of taste in our tests: the cocoa taste is so buttery and fine, with almost no bitterness.
The cocoa butter is 100% pure without any additives and is not deodorized.
For all connoisseurs here is our recipe for white chocolate: 125g cocoa butter, 125g butter, 25g of our Stevia800, 15g of our vanilla -carb sugar in a water bath until all the butter has melted (preferably not over 50°C). Then add 200 g cream powder and stir intensively with a whisk for about 5 minutes until a smooth chocolate dough has formed.
The perfect white chocolate is ready.
We then pour them onto a baking sheet lined with parchment paper and let them cool in the fridge.
