Chia, the miraculous seed from South America, as a de-oiled flour

With the seeds of the CHIA plant from Mexico, the word messenger takes on a whole new meaning. Chia was used by the Maya in Mexico more than 1000 years ago as food for the messengers on the march. And with good reason: Chia means “strength” in the Mayan language. That doesn't mean that it contains a lot of carbohydrates. On the contrary: Chia is rich in proteins and particularly good fats. Chia is the only plant we know of that contains 18 g omega 3 fatty acids per 100 g. In addition, chia is particularly high in fiber and full of vitamins and minerals: more calcium than milk, more potassium than bananas and three times more iron than spinach. Chia is also world champion in terms of antioxidants. That's why it doesn't go bad even after many years of storage. (The MHD specification often strongly rejects this, since it has to be made according to the specifications of the country of manufacture)

For the first time we can now also offer de-oiled chia flour for the production of bread and baked goods. For this purpose, part of the oil was extracted from the chia seeds in a gentle cold pressing and then the press cake was finely ground.

Chia flour is particularly rich in protein and fiber.

First experiences from the production of bread were very promising. In combination with almond flour and wheat gluten, the bread became particularly fluffy. The addition of chia flour greatly reduced the inherent taste of the almond flour, resulting in a very tasty bread.

Chia flour is also able to absorb quite a lot of water and is therefore well suited for thickening soups and sauces.

Our chia seeds come from Bolivia and were bought by our supplier from small farmers with fair prices. The grinding took place in Austria.

According to the EU Novel Food approval, the recommended amount of chia seeds per day is 15 grams.

Our Chai has been tested in a renowned accredited laboratory and is guaranteed free of pesticides.

We recommend sifting all our flours before processing.
